breakfast.

i usually prefer my eggs with cheese. a lot of cheese. but i was inspired by this post on the mossy cottage to add a little fresh spinach to my eggs instead. honestly, i wasn't much of a fan, but good thing i had enough mushrooms and avocado in this scramble to make up for it. i'm really just looking for any excuse to consume this costco sized bag of spinach in my fridge before it spoils. spinach party, anyone?
scrambled eggs.

Definitely smoothies. And it's not being heated, so all the nutrients are still there when you drink it down! You can't even taste it once it's blended with other fruits!

I'm so glad you were able to use a bit of your spinach! If all else fails, you can steam it and then freeze it for future use.

Hm, I think I'd make spinach and feta triangles if I were trying to get rid of some spinach!

Try making udon noodles with spinach - so good and a lot goes a little way so it uses it up!
